Peking Duck
If you go to Beijing (and you're not a vegatarian, or freaked out by poultry that isn't chicken) you have to have Peking Duck at least once. In a perfect world I think I'd have some kind of duck dish every day, but that might be a little indulgent. Of course the duck was excellent, and it took a lot of walking after dinner for us to feel less bloated and greasy. Here's a picture of our duck waiter slicing all the delicious pieces of skin and meat off the duck. The blur where his hand should be is a massive cleaver carving off thin pieces of duck.
